Clean Eating: A New Innovative Diet Plan

Recently I discovered Clean Eating. I don’t know a whole lot about it but from what I have read it is basically eating healthy foods that have no preservatives, and additives. To eat clean you have to watch your fat, calories and carbs and eat more fresh foods such as fresh fruits and vegetables. I have digestive problems including IBS. According to the clean eating philosophy if you follow this diet it will help your digestive problems. Clean eating is also recommended for people trying to lose weight and it helps reduce your risk for heart disease. In the months ahead I will share with you what I have learned from adapting to this diet. I will start with a simple and delicious clean eating recipe.

Vegetable Quesadillas

Ingredients:
2 tsp canola oil
1/2 cup diced onion
4 green onions, sliced
1 tsp minced jalapeno pepper, or to taste
1 small garlic clove, minced
1/2 cup fresh chopped tomato
1/4 cup frozen corn
1/2 cup sliced mushrooms
1 tbsp fresh, chopped cilantro
1/4 tsp sea salt
Fresh ground pepper to taste
4 corn tortillas
1/4 cup shredded reduced-fat-cheddar or Monterey Jack cheese

Instructions:
One In a medium skillet, heat oil. Add onion, green onions, jalapeno pepper, garlic, tomato, corn and mushrooms. Cook until vegetables start to soften, about 2 to 3 minutes. Add cilantro, sea salt and pepper; set aside.

Two Heat tortillas in a dry, medium skillet over medium heat until pliable, then spoon one-quarter of each of the mixture and shredded cheese on each tortilla. Fold in half and toast for 2 minutes on each side, or until lightly browned.

Nutrients per quesadilla:
Calories: 151, Total Fat: 6g, Sat. Fat: 2g, Trans Fat: 0g, Carbs: 20 g, Fiber 3g, Protein: 7g, Sugars: 2g, Sodium: 257mg, Cholesterol: 8mg.
