I’m back with something very special for you today…cookies that could be eaten as lunch and window shopping for a cause.

First, onto the cookies. I began working on this recipe shortly after my second set of twins was born. I was absolutely desperate for sugar, and I thought that a healthy cookie (with butter and a little chocolate, let’s not go crazy) seemed like the perfect solution. 

It took me a few days…and probably a hundred cookies…to find a recipe that worked for me, and I still change it up from time-to-time. I really hope you’ll love them. They’re a great go-to snack for the kids, and they might be helpful in battling those latent sugar cravings that we all seem to be suffering from now that the Easter candy is just about gone.

Plus, if you throw your kids a cookie as you run out the door [late] for church…they’ll think you’re really cool. Go. Mom!

Cookies for Lunch


1/4 C honey
1/4 C molasses
7 T butter
1 egg
1 1/2 t vanilla


1 1/8 C white flour/ whole wheat flour mix
1 t cinnamon
1/2 t baking soda
1/2 t baking powder
1/2 t salt
3 T flax seed

Combine and add:

1.5 -2 oz. raisins
1 – 1 1/8 C quick cooking oats
1/2 C chocolate chips
3/4 C chopped nuts

Roll rounded tablespoons of dough and place the balls about 2 inches apart on an ungreased pan.
And bake in a 350 degree oven for 8 to 10 minutes.
